Apple Cider Donuts

1 3/4 c. all-purpose flour
1/4 c. sugar
1/4 c. firmly packed, light brown sugar
3/4 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/4 c. buttermilk
1/2 c. apple cider
1 lrg. egg
1/2 c. shredded apples (I used Granny Smith.)
1/2 c. butter, melted
1/4 c. sugar
3/4 tsp. cinnamon

I used a mini-donut maker to make my donuts so I plugged it in to preheat. If you are using a donut pan it should come with directions on how to bake them. More than likely though you will bake mini-donuts at 425°. Be sure to spray either the pan or donut maker with cooking spray.

In the bowl of a stand mixer add the flour, sugars, baking powder, baking soda, salt, cinnamon and nutmeg. Mix on low until well mixed. In another bowl, whisk together the buttermilk, apple cider and egg. Add the wet ingredients to the dry and mix on low-speed until combined. Do not over mix. Stir in the shredded apples.

If baking apples in the oven bake for 6-8 minutes and if baking in a donut maker it should only be 2-3 minutes before they are done. Mix the remaining sugar and cinnamon in a bowl. Once the donuts are cool enough to handle, dip into the melted butter and then dredge them in the cinnamon-sugar mixture.
